HEALTHY fritters

Healthy is good but it still has to taste great. This one does!

Ingredients. 2 cups of grated zucchini, 1/2 tsp salt, 1 cup water, 1/2 cup Quinoa, 1 egg, 3 cloves of garlic (crushed), 1/2 tsp dried oregano, 1 cup grated fresh Parmesan cheese, 1 cup Panko crumbs, 3 tbs olive oil and salt and pepper to taste.

Start off by 1/2 cup of Quinoa in 1 cup of water, bring it to a boil, then reduce to a simmer and cook with a lid on for 10 minutes, fluff with a fork and let it stand.

Grate the zucchinis and toss in a colander with 1/2 tsp salt. Let them stand for about 10 minutes then pat them dry with paper towel.

Then its all in together in a large bowl, zucchini, quinoa, egg, garlic,oregano, fresh Parmesan and panko crumbs. Season with salt and pepper. Its time to use your hands or get your partner to mix all the ingredients until thoroughly combined.

Heat olive oil in a frypan. Make the fritters about 8cm or whatever size you want , work in batched and flatten slightly when you put them into the frypan. Cook until golden and crisp which is about 4 minutes each side.

Serve with Greek yogurt or sour cream or basically whatever sauce you like. You can serve them in a wrap for lunch with some avacado and salad or present them beautifully with a yummy salad for a main meal.
