BRUSH ON BIG FLAVOUR . delicious meat

Argentinian cooks are famous for the juiciest meat, basting it on the grill with a basic salmuera, an Argentinean brine of salt, water, vinegar and olive oil is the secret. Its great for seasoning everything from Pork to Fish. and then when its off the heat brush on some a more complex version. Pork Chops can be too basic but this Argentinian recipe is delicious and worth a try.

1/2 cup Extra Virgin Olive Oil

1/4 cup Sherry Vinegar

1 Shallot, minced

1 clove Garlic, minced

Salt and Pepper

1/4 cup Marcona Almonds, chopped (Blanched Almonds if you cant get the Marcona Almonds)

1 tsp. minced Chives

1 tsp. minced Parsley

1 tsp. minced Mint

1 tsp. minced Coriander

Oil for brushing

4 Bone in Pork Rib Chops about 1 inch thick

Himalayan Salt for finishing

Ok, lets get started. In a bowl whisk 1/4 cup of Olive Oil and 2 tablespoons of the Vinegar with the Shallots, Garlic, 1 tbs of Salt, 1 tsp of Pepper and 1 cup of Water. Stir in the Almonds, Chives, Parsley, Mint and Coriander. Set this aside until the end.

Heat your grill and oil the grate. In a small bowl whisk the remaining Olive Oil and Vinigar with 2 tbs of Salt, 2 tsp of pepper and 1/4 cup of Water. Grill the Pork Chops over moderately high heat, basting frequently with the seasoning Salmuera you have just made, until browned 6 to 7 minutes per side.

Transfer the chops to the platter and baste with some of the Marcona Almond Salmuera. Amazing. Remember to use fresh herbs and we enjoyed it with BBQ Corn, Mashed Potato and Fresh Beans.
